Chilli parotta
Ingredients:
Maida - 2 cups
Garam masala - 3/4 tsp
Chicken 65 masala - 1 tsp
Chicken masala - 1/2 tsp
Coconut - 1/4 cup
Poppy seeds - 1/4 tsp
cashew nuts - 4
Green chilli - 1
Onion - 1/4 cup
Tomato - 1/4 cup
Whole spices
Salt to taste
Direction:
Maida - 2 cups

Onion - 1/4 cup
Tomato - 1/4 cup

Salt to taste
Direction:
- Make a parotta using maida.
- Take 1/2 cup maida,1/2 tsp garam masala,1 tsp chicken 65 masala and salt in a bowl and make them as a batter.
- Grind coconut,cashew nuts and poppy seeds together.
- Heat oil in a pan, add whole spices,curry leaves,onion,green chilli,1/4 tsp garam masala,1/2 tsp chicken masala and tomato.
- Add the ground coconut paste and salt.
- Cut the parotta into small pieces,dip in the batter and deep fry them.(It should be crispy)
- Add fried pieces into the pan.
- Add red food color if you want color.

Chittinad Chicken Kuzhambu
Ingredients:
Chicken - 1kg
Ginger garlic paste - 1/2 tsp
Onion - 1 cup
Tomato - 1 cup
Clove - 3
cinnamon - 1
Mustard seeds
Curry leaves
Coriander leaves
Salt to taste
To grind:
cumin seeds - 1 tbsp
Fennel seeds - 1 tbsp
Poppy seeds - 1/2 tbsp
Pepper - 1/2 tsp
Shredded coconut - 1/4 cup
Red chilli - 5
Turmeric powder - 1/4 tsp
Direction :
Chicken - 1kg
Ginger garlic paste - 1/2 tsp
Onion - 1 cup
Tomato - 1 cup
Clove - 3

Mustard seeds
Curry leaves
Coriander leaves
Salt to taste
To grind:

Direction :
- Marinate chicken with turmeric powder,chilli powder and salt.
- Make a paste of ingredients under 'to grind'.
- Heat oil in a pan and add clove,cinnamon,mustard seeds and curry leaves.
- Now add onion with small amount of salt and saute well.
- Add tomato and chicken. Saute them for 10 minutes.
- Now add the ground paste and add water and salt as you need.
- Boil it for half an hour.
- Finish it with coriander leaves.
- Our kuzhambu is ready...

Egg (kothu)Paratha
Ingredients:
Maida - 1/4 cup
Eggs - 4
Onion - 1/2 cup
Tomato - 1/4 cup
Mustard seeds
Curry leaves
Chilli powder - 1/4 tsp
Pepper powder - 1/4 tsp
Mutton kuzhambu - 1 tbsp(optional)
Direction:
Maida - 1/4 cup
Eggs - 4
Onion - 1/2 cup
Tomato - 1/4 cup
Mustard seeds
Curry leaves
Chilli powder - 1/4 tsp
Pepper powder - 1/4 tsp
Mutton kuzhambu - 1 tbsp(optional)
Direction:
- Make a dough using maida and make 2 parathas(like chapathi) from that.
- Make small pieces of parathas.
- Heat oil in a pan and add mustard seeds,curry leaves,onion and tomato.
- Add chilli powder,pepper powder and salt.
- Now add 2 eggs and saute well.
- When egg is half cooked,add the pieced parathas.
- Add mutton kuzhambu and serve hot.
