Egg (kothu)Paratha

Ingredients:

Maida - 1/4 cup
Eggs - 4
Onion - 1/2 cup
Tomato - 1/4 cup
Mustard seeds
Curry leaves
Chilli powder - 1/4 tsp
Pepper powder - 1/4 tsp
Mutton kuzhambu - 1 tbsp(optional)

Direction:

  • Make a dough using maida and make 2 parathas(like chapathi) from that.
  • Make small pieces of parathas.
  • Heat oil in a pan and add mustard seeds,curry leaves,onion and tomato.
  • Add chilli powder,pepper powder and salt.
  • Now add 2 eggs and saute well.
  • When egg is half cooked,add the pieced parathas.
  • Add mutton kuzhambu and serve hot.

    Happy New Year!! Long time no see, must have enjoyed a great vacation :-)
    This is a nice dish and will make it for breakfast specially when there is some leftover paratha.
    :et me find out the meaning of Kuzhambu...just forgot :-)
