Kaju Katli

Ingredients :

Cashews - 1 cup
Instant dry milk - 1/2 cup
Sugar - 1 cup
Cardamom powder - 1/4 tsp
Water - 1/4 cup

Direction :

  • Powder the cashews and sugar using a blender separately.
  • Keep powdered cashews in a bowl.
  • Heat a pan and add powdered sugar and milk powder.
  • Stir them for 5 minutes.
  • Add the above mixture in the powdered cashews with the cardamom powder and knead them very gently by adding little by little water.
  • When all the powders are mixed well,roll them like chapathi.
  • cut them into shapes you want and decorate with cashews.

Kalakand Milk Sweet




Ingredients:
Milk - 8 cups
Sugar - 1 cup
Pistachios
Lemon juice - 2 tbsp

Direction:

How to prepare paneer:

  • Boil 4 cups of milk.When milk starts boiling,add the lemon juice.
  • Now milk will curdle.
  • Separate the paneer and pour cold water.

Curdled milk.

Paneer separated from water.

4 cups of milk.

Milk reduced to one fourth...


Preparing kalakand :

  • Boil another 4 cups pf milk in a high flame.
  • Once milk starts boil reduce the heat and stir in between until milk reduces into one fourth of its original volume.It will take around 2 hours.
  • Once milk become like cream add the paneer and sugar.
  • Stir continuously for 45 minutes or 1 hour.
  • Pour kalakand into a pan and cut into cubes.
  • Garnish with sliced pistachios.
  • Now our delicious kalakand is ready :)

Paal Kozhukatai

Ingredients :

Rice flour - 1 cup
Milk - 1/2 cup
Sugar - 1/2 cup
cardamom - 2

Direction :
Mix rice flour with water by adding little by little.
Leave some amount of dough as it is.
Make small balls(any shapes) out of the dough.
Steam them using idly cooker.
Mix the remaining dough ,sugar,cardamom and milk well.
Boil them with the cooked kozhukatai for 10 minutes or until it becomes thick.

Egg Bonda

Ingredients :

Eggs - 4
Gram flour - 1 cup
Red chili powder - 1 tsp
Salt - 1/2 tsp

Direction :

Boil the eggs,remove the shell and cut them into half.
Mix gram flour,chili powder and salt.
The batter should be thick.
Heat oil,dip the egg in the batter and deep fry them.

Bonda from left over dosa batter

Ingredients :

Left over dosa batter
Rice flour as req.
Onion
Green chili - 2
Curry leaves
Pepper - 5 or 6
Coriander leaves

Direction :

  • If dosa batter is so thin add rice flour to make it required consistency.
  • Add remaining ingredients in the batter.
  • Heat oil,take some batter by hand and put it in the oil.
  • Deep fry them and eat with coconut chutney.

Adai Dosai

Ingredients :
Toor dal - 1/4 cup
Channa dal - 1/4 cup
Urad dal - 2 tsp
Moong dal - 2 tsp
Rice - 1 cup
Red chili - 3
Curry leaves
Onion
Coconut pieces
Coriander leaves
Cumin seeds
Salt

Direction :

  • Soak rice and all dals separately for 2 hours.
  • At first blend rice,then add dals,red chili and salt.
  • Blend them coarsely and transfer it to a bowl.
  • Now add curry leaves,coriander leaves,coconut,onion and cumin seeds.
  • The batter should be thick.
  • By using dosa tawa make beautiful dosas.
  • Coconut chutney goes well with this dosas.

Spinach Poriyal


Ingredients:

Spinach - 1/4 kg
Onion - 1/4 cup
Shredded coconut - 2 tsp
Mustard seeds
Cumin seeds
Curry leaves
Red chili - 1

Direction:
  • Wash spinach well and cut them properly.
  • Heat oil in a pan and add mustard seeds,cumin seeds,curry leaves,red chili and onion.
  • Saute them well and add spinach.
  • Close the lid and allow to cook.
  • Stir now and them the spinach.
  • cook them until all water evaporates.
  • Finally spread shredded coconut.

Tomato rice

Ingredients:
Basmathi rice - 1 cup
Tomato - 3
Onion - 1/2 cup
coriander leaves - 1 cup
Curry leaves
Mint leaves
Cinnamon - 1
clove - 1
Ginger Garlic paste - 1 tsp
Red chili powder - 1 tsp
Briyani masala - 1/2 tsp
Garam masala - 1/4 tsp
Salt

Direction :

  • Heat oil in a pan and add cinnamon stick and clove.
  • Add curry leaves and onion.
  • Saute them well and add ginger garlic paste.
  • Add tomatoes and saute until tomatoes are well cooked.
  • Mash them with spatula and add red chili powder,briyani masala,garam masala and salt.
  • Add chopped coriander leaves,mint leaves and rice.
  • Saute for a minute and cook in the rice cooker.

Masala Egg Puffs

Ingredients :

Puff pastry - 4
Egg - 2
Onion - 1 cup
Tomato - 1/2 cup
Cumin seeds
Mustard seeds
Curry leaves
Sambar masala - 1/2 tsp
Garam masala - 1/4 tsp
Salt

Direction :

  • Boil the eggs,remove shell and cut them into two half.
  • Heat oil in a pan and split mustard,cumin and curry leaves.
  • Add onion and saute well.
  • Add tomato and saute well until well cooked.
  • Add sambar masala,garam masala and salt.
  • Take a puff pastry,place the egg in the center.
  • Take a spoonful of onion masala and place them above the egg.
  • Close the pastry and place them in a baking tray.
  • Preheat the oven to 450 and keep puffs for 10 or 15 minutes.
