Potato bonda


















Ingredients:

Potato - 3
Onion - 1/2 cup
Chilli powder - 1 tsp
cumin seeds
Besan powder - 1 cup
Salt to taste
Oil ti fry

Direction:

  • Mix besan powder,chilli powder and salt in a bowl.
  • Add water little by little upto it becomes a batter consistency.
  • Pressure cook the potatos and mash it well.
  • Add cuminseeds,onion,chilli powder and salt.
  • Form round balls of potato mix.
  • Heat oil in a pan.
  • Dip the potato balls in the batter one by one and fry it in oil.
  • Awesome potato bonda is ready!

Easy cauliflower fry



















Ingredients:

Cauliflower
Biriyani masala
Salt to taste
Oil 4 tsp

Direction:

  • Put cauliflower in hot water for 10 minnutes.
  • wash well and apply briyani masala and salt to it.Set aside for 10 minutes.
  • Heat 4tsp oil in a pan.
  • Put cauliflower to the pan and fry well.

White Pumpkin Halwa



















Ingredients:

Grated pumpkin - 2 cups
Sugar - 1 cup
Milk - 1 cup
Sliced Almond(or cashews)
Ghee - 3 tsp

Direction:

  • Roast the slice almond(or cashews) in ghee until it becomes golden brown.
  • Add sugar to the milk and heat it until sugar melts.
  • In a pan take 1 tsp ghee and add the grated pumpkin,stir well in low flame till the raw flavor is gone.
  • It will take around 20 minutes.
  • Add this pumpin to the milk and cook till pumpkin is tender.
  • Add almond and mix well.
  • Leave it for 5 minutes.
  • Add 2 tsp ghee to it in low flame till the ghee floats...
  • (If u want, add colour powder to it)

Potato & lima beans


















Ingredients:


Cinnamon - 2
Cloves - 2
Potato - 3
Lima beans
Chopped Tomato - 1 cup
Chopped Onion - 1 cup
Turmeric powder - 1/2 tsp
Sambar powder - 1 tsp
Garam masala - a pinch
Coriander powder - 1/2 tsp
curry leaves
Mustard seeds
Cumin seeds
Grated Cocunut - 1 cup
Salt to taste
Oil to fry

Direction:

  • Boil the potatoes,cut into small pieces and keep it in a bowl.
  • Heat oil in the pan.
  • Add cinnamon,clove and other spicy items u have.
  • Add mustard seeds,cumin seeds and curry leaves.
  • Once seeds start spluttering,add chopped onion.
  • After it turns to golden brown,add tomatoes.
  • Saute well for few minutes.
  • Now add the turmeric powder,corriander powder,sambar powder and garam masala.
  • Blend the grated coconut in the blender and add into our spicy mixture.
  • Add salt in this to your taste.
  • Now add the potatoes and lima beans.
  • Boil it for 15 minutes.
  • Serve it with chapathi.

Tindora fry



















Ingredients:


Tindora(kovakai) - 20 nos
Turmeric powder - 1/2 tsp
Chilli powder - 1/2 tsp
Sambar powder - 1/2 tsp
Salt to taste
Oil - 2 tsp

Direction:

  • Clean and cut the tindora.
  • Heat oil in a pan.
  • Add tindora in the pan and fry for 5 minutes.
  • Now add turmeric powder,chilli powder,sambar powder and salt.
  • Mix and fry them for 3 minutes.
  • Sprinkle little bit water and fry for 10 minutes.

Lemon rice



















Ingredients
:

Cooked rice - 4 cups
Chana dal(kadalai paruppu)- 2 tsp
Urad dal(ulundhu) - 1 tsp
Red chillies - 2
curry leaves
Mustard seeds - 1/4 tsp
cumin seeds - 1/4 tsp
turmeric powder - 1 tsp
salt to taste
Oil - 2 tsp
ghee- 1/2 tsp
Cashew nuts
Pea nuts

Direction:

  • In a pan heat ghee.
  • At first add peanuts and fry them until they turn into light brown.
  • Add cashew nuts and fry them.
  • Remove it and keep in a plate.
  • Heat oil in the pan and add mustard,cumin seed,chilli and curry leaves.
  • When seeds starts to sputter,add chana dal and urad dal.
  • Now sprinkle the turmeric powder,mix and saute for another 5 minutes.
  • After it become cool,add lemon juice.
  • Add the sauted ingredients,peanuts and cashews into the cooked rice.Mix well.
  • Serve it with vathal,pickle etc.

Potato bajji



















Ingredients:

Potato - 2
Besan flour(kadalai mavu) - 1 cup
chilli powder - 1 tsp
clour powder(or turmeric powder)- 1/4
salt to taste

Direction:

  • Mix besan flour,chilli powder and salt.
  • Add colour powder.If u dont have it add turmeric powder.
  • Add water to it and mix it well to avoid lumps.
  • Cut the potatoes in the shape u want.
  • Heat the oil in a pan.
  • Dip each in batter and deep fry in oil.
  • Now you get our lovely evening snacks.

Pidi kozhukattai


















Ingredients:


Rice flour - 2 cups
Roasted Split chick peas (pottu kadalai)- 1 cup
Grated coconut - 1 cup
Jaggery - 1 cup
Cardamom - 1 tsp
Ghee - 2 tsp


Direction:

To make rice dough:
  • Add salt in the hot water.
  • Pour this water into the rice flour slowly until it becomes a dough(chapathi consistency).

To make poornam:
  • In a pan, take ghee and add grated coconut,powdered Roasted Split chick peas (pottu kadalai) and jaggery.
  • Allow jaggery to melt little bit.

To make kozhukattai:
  • Form round balls of rice flour and poornam.
  • Place rice flour on your palm and press to form flat or cup shape.
  • Place the poornam into the rice flour and make it to the shape u want( like in the photo).
  • Then steam it about 10 minutes.
  • Now out pidi kozhulattai is ready...

Round rings


















Ingredients:


Rice flour 1 cup
Maita 1 cup
Chilli powder 1 tsp
Salt to taste
Oil to fry

Direction:


  • To make a dough mix all the above ingredients .
  • Leave it for half an hour.
  • Make round rings of the dough and deep fry in the oil till the color changes to golden brown.

paruppu urundai kulambu


















Ingredients:

Tamarind - lemon size
Tomato - 1
Onion - 1
Mustard seeds - 1/2 tsp
Cumin seeds - 1/2 tsp
Fenugreek seeds - 1/2 tsp
Curry leaves
Sambar powder - 1 tsp
chili powder - 1/2 tsp
salt to taste
Oil

Direction:


  • Take oil in a pan and spread mustard seeds ,fenugreek seeds,cumin seeds and curry leaves.
  • Saute well for few minutes.
  • Pour tamarind pulp and add sambar powder,chili powder and salt.

Ingredients for paruppu urundai:

Channa dal - 1 cup
Onion - 1/4 cup
curry leaves
Coriander leaves
Red chilies - 2
Salt

Direction:


  • Blend the dal,chlli,salt in a blender in which dal is already soaked for 2 hrs.
  • Washed water from the jar should be added to the kuzhambu.
  • Add curry leaves and coriander leaves to the above mixture.
  • Then shape them into a round ball.
  • Put this round ball into the kuzhambu.
  • Boil them for 15 minutes.
  • Now the kuzhambu is ready....

Aloo palak


















Ingredients

spinach - 2 cups
garlic - 2 nos
ginger - little bit
onions - 1
green chilies - 2
potatoes - 2
turmeric - 1 tsp
cumin seed - 1/2 tsp
garam masala - 1/2 tsp
coriander powder - 1 tsp
cumin powder - 1/2 tsp
salt to taste

Directions


  • In a pan cook the spinach with garlic, ginger, onions and the green chilies for about 5-10 minutes.
  • In the meantime boil the potatoes with salt  and set aside when done.
  • Add the cooked potatoes, garam masala, corriander and cumin powder and a little water if needed.
  • Simmer for 10 minutes.
  • Eat this with chapathi..

Paruppu

















Ingredients:


Toor dal - Thuvaram Paruppu - 1/2 cup
2tsp Urad dal
Turmeric powder - 1/2 tsp
Hing - a pinch
2 Red chillies
Curry leaves
Oil for seasoning
Salt to taste

Direction:

  • Wash and keep toor dal and urad dal in a pressure cooker with turmeric powder and hing.. Add 1 cup of water and pressure cook them.
  • Add salt to taste.
  • Keep it for 15 minutes and then mash it.
  • Heat the oil in a pan and the mustard seeds, curry leaves and red chilies.
  • After the mustard seeds splutter,add to the dal paste...
  • Serve it with rice in addition with ghee..

Bitterguard fry


















Ingredients:

4 fresh bitter gourd/ pavakai
2 tsp rice flour
2 tsp red chili powder
salt to taste
oil for deep frying

Direction:

  • Cut bitter gourd into small round pieces.
  • Take them in bowl and add chili powder and salt.
  • Leave them for 30 mins to 1 hr.
  • Heat oil for deep frying. Add bitter gourd pieces one by one. Fry till golden brown.
  • Remove from heat and strain oil with tissue paper. Rice flour makes it crispy and yummy...Serve it with rice,sambar or any other curry...

Onion pakoda



















Ingredients:

6 Onions
1 tsp Chili powder
4 Green chilies,curry leaves
2 Cups besan flour
1/2 Cup rice flour
A pinch baking soda
Salt to taste
Oil to fry



Direction:


โ€ข Thinly slice the onions.
โ€ข Rub the onions with salt.
โ€ข Add the chili powder, besan flour and rice flour in the onion.
โ€ข Mix well and do not add excess water.
โ€ข Take a small portion of the mix at a time and drop it in hot oil.
โ€ข Fry till golden brown.

Meen kuzhambu 1



















Ingredients:


1 kg Fish, cut into smaller pieces
Tamarind, size of a table tennis ball
1 tsp Fennel
1 tsp Turmeric powder
1 tsp Vegetable oil
1 Large onion
1 Big tomato
1/2 Cup fresh coriander leaves, chopped
3 tsp Masala powder
Salt to taste
Methi seeds
Few curry leaves
Direction:

โ€ข Apply turmeric powder and salt on fish, keep aside.
โ€ข Wash it properly after 5 minutes.
โ€ข Soak the tamarind in water and remove thick pulp.
โ€ข Pour vegetable oil in a pan and season it using methi seeds and mustard seeds..
โ€ข Now add the curry leaves and chopped onions.
โ€ข Cook it until the onion turns brown.Add tomato and saute well.
โ€ข Add the tamarind pulp mixture and boil it, cover the pan tightly.
โ€ข Add the fish after 10 minutes of boiling. Cook it properly.
โ€ข Remove from the fire when done and garnish it with coriander leaves.
โ€ข Meen kulambu is ready to serve.


Fish Fry

















Ingredients
 Fish - 1/2 kg
Fish fry masala - 2 tsp
lemon juice - 1 tsp
Curd - 1 tsp
Salt to taste

Oil to fry

Direction:

  • Marinate the fish pieces with fish fry masala, lemon juice and curd.Keep them for 1/2 an half.
  • Now heat the oil in a pan and  fry the fish for 15 minutes on both sides.
  • Serve the fish with rice.


Rasagulla



















Ingredients:

Milk - 4 cups
Lemon juice - 3 tbsp
Sugar - 1 1/2 cup
water - 3 cups

Direction:

  • Boil the milk for 10 minutes and pour the lemon juice in it.
  • Now paneer will be separated from the milk.
  • Separate this paneer from the water by pouring this in a  cheese cloth.
  • Boil water in pressurecooker and add sugar in that.
  • Then make round balls using the paneer and cook them in the above water for 15 minutes.
  • After 15 minutes take them out.
  • Refregirate them and serve.
