Tomato rice

Ingredients:
Basmathi rice - 1 cup
Tomato - 3
Onion - 1/2 cup
coriander leaves - 1 cup
Curry leaves
Mint leaves
Cinnamon - 1
clove - 1
Ginger Garlic paste - 1 tsp
Red chili powder - 1 tsp
Briyani masala - 1/2 tsp
Garam masala - 1/4 tsp
Salt

Direction :

  • Heat oil in a pan and add cinnamon stick and clove.
  • Add curry leaves and onion.
  • Saute them well and add ginger garlic paste.
  • Add tomatoes and saute until tomatoes are well cooked.
  • Mash them with spatula and add red chili powder,briyani masala,garam masala and salt.
  • Add chopped coriander leaves,mint leaves and rice.
  • Saute for a minute and cook in the rice cooker.

Masala Egg Puffs

Ingredients :

Puff pastry - 4
Egg - 2
Onion - 1 cup
Tomato - 1/2 cup
Cumin seeds
Mustard seeds
Curry leaves
Sambar masala - 1/2 tsp
Garam masala - 1/4 tsp
Salt

Direction :

  • Boil the eggs,remove shell and cut them into two half.
  • Heat oil in a pan and split mustard,cumin and curry leaves.
  • Add onion and saute well.
  • Add tomato and saute well until well cooked.
  • Add sambar masala,garam masala and salt.
  • Take a puff pastry,place the egg in the center.
  • Take a spoonful of onion masala and place them above the egg.
  • Close the pastry and place them in a baking tray.
  • Preheat the oven to 450 and keep puffs for 10 or 15 minutes.

Simple Egg Puffs

Ingredients :

Eggs - 2
Puff Pastry - 4
Crushed pepper
salt

Direction :

  • Boil the eggs and remove the shell.
  • Cut them into two half and place them in the puff pastry.
  • Fold it as you like.
  • Preheat the oven for 450.
  • Keep the puffs for about 10 minutes.

Home Made Puff Pastry

Ingredients :

All purpose flour(Malida) - 2 cups
Butter - 220g(2 Sticks)
Lime juice - 4 drops
Salt - a pinch

Direction :

  • Take maida in a pan and melt a small portion of butter.
  • Add melted butter,little bit of water,lime juice and salt.
  • Make a soft dough.
  • Mash well the remaining butter in a bowl and make a square shaped butter out of it.
  • Take the dough in a vegetable cutter or a tray.
  • Sprinkle some flour and spread them well using chapathi roller.
  • Place the butter in center of the dough and cover it up.
  • Slowly spread the dough and sprinkle some flour now and then as required.
  • Fold the dough 3 times and keep it in fridge for 10 minutes.
  • Do it again for 5 times.Finally roll the sheet evenly and cut them into the required shape.

Idly & Idly Sambar

 Idly :

Ingredients:

Idly rice - 4 cups
Urad dal - 1 cup
Fenugreek seeds - 1 tsp
salt

Direction:

  • Soak idly rice in the water for about 6 hours.
  • Soak urad dal and fenugreek together for about 6 hours.
  • Grind the rice first and then urad dal.
  • Add required quantity of water while grinding.
  • Now mix both batter together with salt.
  • Ferment the batter by keeping aside overnight.
  • Mix the batter well and pour batter in the idly pan.
  • Steam for about 15 minutes.

Sambar:

Ingredients:

Moong dal - 1/2 cup
Tomato - 1
Onion - 1/4
Green chili - 5
Turmeric powder - a pinch
Asafoetida - a pinch
Sambar powder - 1 tsp
Curry leaves
Mustard seeds


Direction:

  • Fry moong dal for about 3 minutes and then pressure cook it with asafoetida and turmeric powder.
  • Heat oil in a pan and add mustard seeds,curry leaves and onion.
  • Saute well until onion turns translucent.
  • Add tomato & green chili and saute well.
  • Add this to the cooked dal and add required water.
  • Add sambar powder and salt.
  • Give a boil and now our sambar is ready to eat with idly..

Potato Palkoottu( coconut & potato curry)

Ingredients:

Potato - 3
Onion - 1/2 cup
Shredded coconut - 1/2 cup
Green chili - 4
Mustard seeds - 1/4 tsp
Curry leaves

Direction:

  • Pressure cook the potatoes.
  • Heat oil in a pan and add curry leaves,mustard seeds and onion.
  • saute well and blend the coconut and green chili together.
  • Add coconut paste to the onion.
  • Give a boil and cut the potatoes into small pieces.
  • Add them to the coconut paste.
  • Close the lid for 5 minutes.

Spinach & Black channa Curry


Ingredients:

Spinach - 3 cups
Black channa - 1/2 cup
Tomato - 2
Cumin seeds - 1/2 tsp
Mustard seeds - 1/4 tsp
Curry leaves
Green chili - 2
Ginger - a small piece
Sambar masala - 1 tsp
Salt to taste

Direction:

  • Pressure cook the channa for 3 whistle.
  • Blend tomato,green chili and ginger.
  • Heat oil in a pan and add mustard seeds,cumin seeds and curry leaves.
  • Add the tomato paste and stir for 5 minutes.
  • Cut the spinach into small size and add to the above paste.
  • Add sambar masala and salt.
  • Now add channa and allow to boil.
  • Serve hot with rice or rotti.

Puliyotharai(Tamarind Rice)







Ingredients:
Rice - 1 cup
Tamarind - lemon size ball
Mustard seeds - 1 tsp
Channa dal - 2 tsp
Urad dal - 2 tsp
Peanuts - 2 tsp
Curry leaves
Red chili - 7 or 8
Hing - a pinch
Turmeric powder - 1/2 tsp
Coriander powder - 1/2 tsp
Cumin powder - 1/4 tsp
Red chili powder - 1/4 tsp
Salt - 2 ot 3 tsp

Direction:

  • Cook the rice and allow it to cool.
  • Make a thick tamarind extract and keep it aside.
  • Heat 3 tsp of oil in a pan and add mustard seeds,red chili,channa dal,urad dal and peanuts.
  • Saute them until all dals cook and add curry leaves.
  • Now add hing and turmeric powder and saute for 5 minutes.
  • Add tamarind extract and allow to boil.
  • After 5 minutes add coriander powder,cumin powder,chili powder and salt.
  • Boil this gravy until it becomes thick paste and also the oil separates from the gravy.
  • Take required gravy and add to the cooked rice.
  • Mix it well and serve with pickle or vadagam.

You can preserve the remaining paste in an air tight container.
Keep refrigerate and use as and when required.

Poori with Chicken kurma


Ingredients:

Wheat flour - 1 cup
Hot Water - 1/4 cup
Salt to taste



Direction:

  • Mix flour and salt together.
  • Kneed the flour by adding little by little water.
  • Kneed it so gently and softly.
  • The dough should be so soft.
  • Cover it with a wet cloth. Heat oil for Deep Frying.
  • Divide the roll into lime sized balls. With the help of rolling pin , roll each to circular shape.
  • Deep fry poori in hot oil for a minute,turn side & fry till puffed & golden in color.
  • Serve with poori kizhangu(potato curry) or chicken kurma
