Egg plant fry

Ingredients:

Egg plant - 1
Chilli powder - 2 tsp
Turmeric powder - 1 tsp
Rice flour - 1 tsp
Salt to taste

Direction:

  • Mix chilli powder,turmeric powder,rice flour and salt together in a bowl.
  • Cut egg plant into round shaped pieces.
  • Mix egg plant pieces in the above mixture.
  • Heal oil in a pan and fry them until they are cooked.
  • Serve this as a side dish for dal.

    Today I had egg plant fry and Sambar! (After many many months Sambar was cooked, a delicacy for us.
    Next time I will use rice and chili powder. I just put turmeric and salt and fry with a thin layer of oil on the pan. ( I make the egg plant starving and begging for oil, learnt from my Mom long back. It tastes good)
