Simple chicken Kurma

Ingredients:

Chicken - 1/4 kg
Onion - 1 cup
Tomato - 1cup
Ginger garlic paste - 2 tsp
Shredded coconut - 1/2 cup
Sambar masala - 2 tsp
Clove - 2
Cinnamon - 1
curry leaves
Mustard seeds
Poppy seeds - 1 tsp
Cashew nuts - 4
Salt to taste

Direction :

  • Wash chicken and cut them into small pieces.
  • Soak poppy seeds for about 15 minutes and blend it with coconut and cashew nuts.
  • Heat oil in a pan,add cloves,cinnamon,mustard seeds and curry leaves.
  • Add onion and saute well until it turns translucent.
  • Now add ginger garlic paste,saute until  raw smell goes.
  • Then add tomato and saute until it cooks well.
  • Add masala powder and salt and close the lid.
  • Keep aside for about 5 minutes.
  • Now it looks like a gravy.(check salt and masala)
  • Add chicken and coconut paste.
  • Close the lid and allow to boil until oil oozes out from the chicken and gravy.
  • Now you can serve it for rice,dosai,roti or poori.

Mutter Paneer


Ingredients:

Green peas - 1 cup
Paneer - 1/2 cup
Onion - 1/2 cup
Tomato - 1 cup
Coriander powder - 2 tsp
Cumin powder - 1 tsp
Chili powder - 1 tsp
Ghee - 1/2 tsp
Salt to taste

Direction:

  • Heat ghee in a pan and roast the paneer.
  • Cut them into small cubes.
  • Heat oil in another pan and add onion and tomato.
  • Saute them well and blend them using a blender.
  • Pour the tomato puree in the pan and add coriander powder,cumin powder,chili powder and salt.
  • Add green peas in it.
  • Let it boil for 15 minutes.
  • Then add paneer and let it be simmer for 5 minutes.

Egg kurma

Ingredients:

Egg - 2
Onion - 1 cup
Tomato - 1/2 cup
Greeen chilli - 1
Mustard seeds
Curry leaves
Coconut - 1/2 cup
Sambar powder - 1 tsp
Salt to taste

Direction:
  • Grind coconut in a blender.
  • Heat oil in a pan,add mustard seeds,curry leaves,onion and little bit of salt.
  • Saute well and add tomato.
  • Now break two eggs and stir continously until eggs are cooked.
  • Add the coconut paste with little amount os water.
  • Then add sambar powder and required amount of salt.

Tomato kurma

Ingredients:
Tomato -3 cups
Oninion - 1 cup
Onion - 1 cup
Cinnamon - 1
Clove - 2
Garam masala - 1/4 tsp
Sambar powder - 1 tsp
Coconut - 1/2 cup
Fennel seeds - 1/2 tsp
Poppy seeds - 1/2 tsp
Mustard seeds
Curry leaves

Direction:

  • Soak poppy seeds for about 15 minutes.
  • Grind coconut,fennel seeds and poppy seeds together.
  • Heat oil in a pan add cloves,cinnamon,mustard seeds and curry leaves.
  • Add onion with pinch of garam masala and saute well.
  • Then add tomato and allow to cook.
  • After tomatoes are well cooked,gently mash the to make gravy.
  • Now add coconut paste,garam masala,sambar powder and salt.
  • Give a boil and tomato curma is ready to serve with chapathi.

Muttai(egg) kuzhambu

Ingredients:

Eggs - 3 or 4
Onion - 1/4 cup
Shredded coconut - 1/2 cup
Poppy seeds - 1 tsp
Cinnamon - 2
Clove - 1
Black cardamom - 1
Fennel seeds - 1/2 tsp
sambar powder - 1 tsp
Mustard seeds
Curry leaves
Oil
Salt to taste



Direction:

  • Boil the eggs and cut partially on white.
  • Heat oil in a pan,add one cinnamon,poppy seeds,fennel seeds,onion and coconut.
  • Saute well for 10 minutes and then grind them in a blender.
  • Heat oil in the same pan,add mustard seeds,cinnamon,clove,black cardamom and curry leaves.
  • Now add the ground mixture.
  • Add sambar powder and salt and allow to boil.
  • Now add eggs slowly one by one.
  • This kuzhambu is perfect for idly and dosai.

Egg curry

Ingredients:

Egg - 4
Onion - 1 cup
Mustard seeds - 1/4 tsp
Cumin seeds - 1 tsp
Fenugreek seeds - 1/4 tsp
Curry leaves
Ginger garlic paste - 1/2 tsp
Turmeric powder - 1/2 tsp
Coriander powder - 2 tsp
Cumin powder - 1 tsp
Chilli powder - 1 tsp
Sambar powder(optional) - 1 tsp
Green chilli - 3
Red chilli - 2
Tamarind juice - 1 cup( thick consistency)
Coconut powder - 2 tsp
Salt to taste
Oil 2 tsp


Direction:

  • Boil eggs and cut them partially on the white.
  • Soak tamarind in hot water.
  • Heat oil in a pan and add mustard seeds,cumin seeds,red chilli,curry leaves and then onion.
  • Saute well until onion turn into golden brown.
  • Add turmeric powder as well as ginger garlic paste.
  • Now add a small amount of water in the above mixture.
  • Add coriander powder,cumin powder,chilli powder,sambar powder and salt.
  • At this stage add coconut powder.
  • Extract the juice from tamarind and add to the mixture.
  • Let it boil for 15 minutes.
  • Put eggs one by one slowly.
  • After half an hour the egg absorbs the paste and it will taste awesome when you eat with Paruppu Sadam with ghee.

White kurma

Ingredients:

Potato - 2
Tomato - 1
Onion - 1
Green chilli - 2
Mustard seeds - 1/4 tsp
Curry leaves
Coconut - 2 tsp
Fennel seeds - 1/4 tsp
Split chick peas(pottu kadalai) - 2 tsp

Direction:

  • Boil potato,peel off them and cut into small cubes.
  • Grind fennel seeds,green chilli,coconut and split chick peas.
  • Heat oil in a pan and add mustard seed and curry leaves.
  • Saute well the onion and the tomato for a few minutes.
  • Add the grinded paste and saute well for 10 minutes.
  • Then add potatos and allow them to boil.

Tomato chicken kurma


Ingredients:

Chicken - 1/2 kg
Tomato - 2
Onion - 1 cup
coconut - 1 cup
Clove - 1
Cinnamon - 1
Green chilli - 3
Cumin seeds - 1 tsp
Fennel seeds - 1 tsp
Garlic - 3 nos
Chilli powder - 1 tsp
Sambar powder - 1 tsp
Corriander powder - 2 tsp
curry powder(red chilli,cumin seed,kus kus) - 1 tsp
Turmeric powder - 1/4 tsp
Ginger garlic paste
Salt to taste
Oil as required

Direction:

  • Wash the chicken and cut into small pieces.
  • Take oil in pan and put mustard seeds,clove,cinnamon,green chillies,fennel seeds,cumin seeds and garlic.
  • Add onion and ginger garlic paste and saute well.
  • Blend tomatos and add this tomato juice to the above mixture.
  • Close the pan and leave it for 15 minutes.
  • At that time grind coconut and keep aside.
  • After 15 minutes add chilli powder,sambar powder,curry powder,corriander powder,turmeric powderans salt.
  • Now add coconut and chicken pieces.
  • It will take 15 or 20 minutes to become a good kurma or gravy.
  • So keep aside and enjoy this with idly,dosa,chapathi or rice.

Potato & lima beans


















Ingredients:


Cinnamon - 2
Cloves - 2
Potato - 3
Lima beans
Chopped Tomato - 1 cup
Chopped Onion - 1 cup
Turmeric powder - 1/2 tsp
Sambar powder - 1 tsp
Garam masala - a pinch
Coriander powder - 1/2 tsp
curry leaves
Mustard seeds
Cumin seeds
Grated Cocunut - 1 cup
Salt to taste
Oil to fry

Direction:

  • Boil the potatoes,cut into small pieces and keep it in a bowl.
  • Heat oil in the pan.
  • Add cinnamon,clove and other spicy items u have.
  • Add mustard seeds,cumin seeds and curry leaves.
  • Once seeds start spluttering,add chopped onion.
  • After it turns to golden brown,add tomatoes.
  • Saute well for few minutes.
  • Now add the turmeric powder,corriander powder,sambar powder and garam masala.
  • Blend the grated coconut in the blender and add into our spicy mixture.
  • Add salt in this to your taste.
  • Now add the potatoes and lima beans.
  • Boil it for 15 minutes.
  • Serve it with chapathi.

Aloo palak


















Ingredients

spinach - 2 cups
garlic - 2 nos
ginger - little bit
onions - 1
green chilies - 2
potatoes - 2
turmeric - 1 tsp
cumin seed - 1/2 tsp
garam masala - 1/2 tsp
coriander powder - 1 tsp
cumin powder - 1/2 tsp
salt to taste

Directions


  • In a pan cook the spinach with garlic, ginger, onions and the green chilies for about 5-10 minutes.
  • In the meantime boil the potatoes with salt  and set aside when done.
  • Add the cooked potatoes, garam masala, corriander and cumin powder and a little water if needed.
  • Simmer for 10 minutes.
  • Eat this with chapathi..
