Uzhundhu(Urad dal) vadai



Ingredients

Urad dal 1 cup
Onion 1/4 cup
Curry leaves 5 to 6 leaves
Coriander leaves A small bunch
Cumin seeds 1 tsp
Pepper 1/2 tsp
Green chilli 1 or 2
Salt as required
Oil as required

Direction

  • Wash and soak urad dal for 2 hours.
  • Grind urad dal in the grinder if you can,otherwise blend in a blender by adding little by little water.
  • Do not add too much water. If you add too much water, the vadai will be too oily.If your batter is so thick,it will become hard.To avoid this,check the batter before making the vadai.
  • Take some water in a bowl,put a small amount of batter into the water. If the batter floats,the consistency is good.
  • Heat some oil in a pan.Mix all the ingredients in the batter.
  • Take water in a bowl, dip your hand in the water and take some lemon size batter. Make it into a ball. Press in the middle of the ball and put it into the oil.Fry them until it turns into golden brown. Have it with coconut chutny and enjoy :)

Lilva Kachori

Ingredients :
All purpose flour(Maida) - 1 cup
Surti Lilva - 1/2 cup
Green chili - 2
Coriander leaves - 1/2 cup
curry leaves
Mustard seeds
Cumin seeds - 1/4 tsp
salt
Oil for frying

Direction :

  • Mix the flour and salt,add water to make it a soft dough.Keep aside for 10 minutes.
  • Blend lilva,green chili,coriander leaves and curry leaves together.
  • Heat oil in pan and add mustard seeds & cumin seeds.
  • Add the ground mixer and saute well tell it becomes dry and tender.
  • It will take around 15 to 20 minutes.
  • Heat oil in a pan for frying.
  • Make 6 balls out of the dough and the liva.Take one ball and make small roti from that.
  • Place lilva ball in the center of the roti and close the edges as we do in the modak.Then roll it in your palm to make a smooth ball.
  • Put these balls into the oil.Deep fry them till it becomes golden brown.
  • Serve hot with tea or coffee.

Kadalai Mittai,Chikki(Peanut Brittle)






Ingredients:
Peanuts - 1 cup
Jaggery - 1/2 cup
Sugar   - 1/2 cup
Aluminum foil

Direction :
  • Dry roast the peanuts well for 15 to 20 minutes.
  • Cool and place it in a cloth.
  • Press well with your palm to remove skin and break them.
  • Grease a plate with oil or ghee.
  • Heat two pans,take the sugar in one pan and the jaggery in another pan.
  • Pour 1 tbsp of water in the jaggery.
  • Do not add water in the sugar. It will melt slowly and will become caramel.
  • To check the right consistency pour a drop of jaggery and caramel in the water.
  • If you can make a ball out of it,then that will be the right consistency.
  • Then pour caramel into the jaaggery and mix well.
  • Now add peanuts and mix it carefully.
  • Pour the mixer into the plate.
  • By a knife cut them correctly.

Paal Kozhukatai

Ingredients :

Rice flour - 1 cup
Milk - 1/2 cup
Sugar - 1/2 cup
cardamom - 2

Direction :
Mix rice flour with water by adding little by little.
Leave some amount of dough as it is.
Make small balls(any shapes) out of the dough.
Steam them using idly cooker.
Mix the remaining dough ,sugar,cardamom and milk well.
Boil them with the cooked kozhukatai for 10 minutes or until it becomes thick.

Egg Bonda

Ingredients :

Eggs - 4
Gram flour - 1 cup
Red chili powder - 1 tsp
Salt - 1/2 tsp

Direction :

Boil the eggs,remove the shell and cut them into half.
Mix gram flour,chili powder and salt.
The batter should be thick.
Heat oil,dip the egg in the batter and deep fry them.

Bonda from left over dosa batter

Ingredients :

Left over dosa batter
Rice flour as req.
Onion
Green chili - 2
Curry leaves
Pepper - 5 or 6
Coriander leaves

Direction :

  • If dosa batter is so thin add rice flour to make it required consistency.
  • Add remaining ingredients in the batter.
  • Heat oil,take some batter by hand and put it in the oil.
  • Deep fry them and eat with coconut chutney.

Masala Egg Puffs

Ingredients :

Puff pastry - 4
Egg - 2
Onion - 1 cup
Tomato - 1/2 cup
Cumin seeds
Mustard seeds
Curry leaves
Sambar masala - 1/2 tsp
Garam masala - 1/4 tsp
Salt

Direction :

  • Boil the eggs,remove shell and cut them into two half.
  • Heat oil in a pan and split mustard,cumin and curry leaves.
  • Add onion and saute well.
  • Add tomato and saute well until well cooked.
  • Add sambar masala,garam masala and salt.
  • Take a puff pastry,place the egg in the center.
  • Take a spoonful of onion masala and place them above the egg.
  • Close the pastry and place them in a baking tray.
  • Preheat the oven to 450 and keep puffs for 10 or 15 minutes.

Simple Egg Puffs

Ingredients :

Eggs - 2
Puff Pastry - 4
Crushed pepper
salt

Direction :

  • Boil the eggs and remove the shell.
  • Cut them into two half and place them in the puff pastry.
  • Fold it as you like.
  • Preheat the oven for 450.
  • Keep the puffs for about 10 minutes.

Home Made Puff Pastry

Ingredients :

All purpose flour(Malida) - 2 cups
Butter - 220g(2 Sticks)
Lime juice - 4 drops
Salt - a pinch

Direction :

  • Take maida in a pan and melt a small portion of butter.
  • Add melted butter,little bit of water,lime juice and salt.
  • Make a soft dough.
  • Mash well the remaining butter in a bowl and make a square shaped butter out of it.
  • Take the dough in a vegetable cutter or a tray.
  • Sprinkle some flour and spread them well using chapathi roller.
  • Place the butter in center of the dough and cover it up.
  • Slowly spread the dough and sprinkle some flour now and then as required.
  • Fold the dough 3 times and keep it in fridge for 10 minutes.
  • Do it again for 5 times.Finally roll the sheet evenly and cut them into the required shape.

Crispy Poha


Ingredients:

Poha - 1 cup
Channa dal - 2 tsp
Urad dal - 2 tsp
Peanut - 2 tsp
Cashew - 5
Curry leaves
Chili powder - 1/4 tsp
Turmeric powder - 1/4 tsp
Salt

Direction:

  • Heat oil in pan,add curry leaves,channa dal,urad dal,peanuts and cashews.
  • Saute them well and add chili powder,turmeric powder and salt.
  • Now add poha and saute for 5 minutes.
  • Easy...crispy...poha is ready!!!

Urulaikizhangu(Potato) Kola Urundai

Ingredients:
Potato - 3
Egg - 1
Onion - 1/4 cup
Chili powder - 1 tsp
Cumin seeds - 1/2 tsp
Bread crumbs - 1/4 cup
Curry leaves
Coriander leaves
Salt to taste
Oil to fry



Direction:

  • Boil potatoes in a pressure cooker.
  • Mash them well and add onion,chili powder,cumin seeds,curry leaves,coriander leaves and salt.
  • Break an egg in a bowl and beat it well.
  • Spread the bread crumbs in a plate.
  • Make small balls from the mashed potatoes.
  • Dip each balls in the egg and apply the bread crumbs.
  • Fry them in hot oil.

Evening crackers

Ingredients:
Rice flour - 1 cup
Besan flour - 1/2 cup
Chilli powder - 1 tsp
Cumin seeds - 1 tsp
Salt to taste
Oil to fry

Direction:

  • Mix all of the above ingredients except oil.
  • Add water little by little to make a dough.
  • Divide the dough into 6 parts and roll them into balls.
  • Roll out the balls into circle like chapathi and cut them into shape you want.
  • Fry them in oil.
  • Simple evening crackers are ready now....

French Toast

Ingredients:

Bread slices - 4
Eggs - 2
Sugar - 2 tsp
vanilla extract - 5 drops

Direction:

  • Cut bread slices into triangle.
  • Break 2 eggs and add other ingredients.
  • Beat well using a whisk.
  • Place the egg slices in a pan.
  • Pour the egg mixture into the pan.
  • Turn the bread slices to coat completely absorbed about 5 minutes.
  • Heat another pan and brush with small amount of melted butter.
  • Place 4 bread slices on the pan.
  • Turn the bread slices again.
  • Sprinkle little powdered sugar and serve hot.

Egg parotta

Ingredients:

Maida - 1 cup
Egg - 4
Onion - 1 cup
Chilli powder - 1/2 tsp
Corriander leaves
Curry leaves
Salt to taste

Direction :

  • Add salt to the maida and add water little by little to make a soft dough.
  • Now break eggs and beat them until they combine together.
  • Add chopped onion,corriander leaves,curry leaves,chilli powder and salt.
  • Divide the dough inot 5 balls and roll each ball into a circle like our chapathi.
  • Heat the tava,put chapathi on it.
  • Let it be for 2 minutes and turn.
  • Let it be for 2 or 3 minutes.
  • Now pour the egg mixture on the top of our chapathi by a spoon.
  • After 3 minutes fold them or fold them as u like..
  • This parotta will be very soft..
  • This will be served in dinner or as a snacks...

Chicken chukka

Ingredients:

Chicken - 1/4 kg
Chilli powder - 2 tbsp
clove - 1
cinnamon - 1
Bay leaves - 1
Ginger garlic paste - 1 tbsp
Egg - 1
Maida - 3 tbsp
Bread crumbs - 1 tsp
Salt to taste

Direction :

  • Cut the chicken into medium sized pieces.
  • Take full of water in a pan and add 1/2 tsp chilli powder,1/2 tsp ginger garlic paste,clove,cinnamon,bay leaves and salt.
  • To the above water add the chicken pieces.
  • Soak the chicken for atleast 1 hour in warm water.
  • In a bowl break the egg and add remaining chilli powder,ginger garlic paste and salt.
  • In another bowl, take maida,bread crumbs and salt.
  • After one hour drain the chicken.
  • Heat oil in a pan,take one piece of drained chicken.
  • Put the chicken first in the egg chilli paste and then in the maida.
  • Then fry this chicken in hot oil.
  • It will be very crispy and enjoy this as your evening snack or in the lunch.

Badam halwa

Ingredients:

Badam - 1 cup
Sugar - 1 cup
Milk - 1/4 cup
Ghee - 1 tbsp
Food color
Cashews

Direction :

  • Soak badam for 4 hours.After 4 hours remove the peel and pour them to a blender.
  • Add milk to the blender.
  • Blend badam and milk into a smooth paste.
  • Heat ghee in a pan and add the paste to the pan.
  • Stir well in medium heat.
  • Add sugar and food color.
  • Stir continuously until it become a thick halwa.
  • Enjoy this halwa wiht your family.

Potato fry

Ingredients:

Potato - 2
Rice flour - 2tsp
Red chilli - 2tsp(as req)
salt to taste
Oil - 1 tbsp

Direction:

  • Remove the peel of the potatoes and cut into small pieces.
  • Add rice flour,red chilli and salt.
  • Set aside for 10 minutes.
  • Heat oil in a pan and add the potatoes.
  • Saute them and close the pan.After 5 minutes saute them and close.
  • If you do like this,you will get crispy potato fry....

Simple Aloo- Gopi

Ingredients:

Potato - 3
Cauliflower - 1 cup
Tomato - 1 cup
Onion - 1/2 cup
Green chilli - 2
Mustard seeds & urad dal - 1/4 tsp
cumin seeds - 1/4 tsp
Corriander powder - 1/4 tsp
Chilli powder - 1/4 tsp
Turmeric powder - 1/4 tsp
Salt to taste


Direction:

  • Finely chop the tomato,onion and green chilli.Put them together in a bowland mash them well.
  • Heat oil in a pan,spead mustard seeds and cumin seeds.
  • Then add the mashed tomato.Saute for 5 minutes.
  • Add turmeric powder in this.It will give nice aromatic flavor.
  • Put potatos and cauli flower now to the ablove mixture and add chilli powder,corriander powder and salt.
  • Allow to cook the potato and cauliflower.It will take around 10 minutes.
  • Keep mixture dry.

Semia kesari


Ingredients:

Semiya - 1 cup
Sugar - 1 cup
Cardamom - 1
Ghee - 1 tsp
Almond
Kissmis

Direction :

  • Put 1 tsp of ghee in a pan and fry cashews or almond and kissmis with cardamom.
  • Add semiya into this and fry until it produces a nice flavor.
  • In another pan,and 2 cups of water,allow to boil.
  • Add semiya into water little by little without forming clot.
  • After the semiya boiled,add sugar.
  • Boil them for 5 minutes.
  • If you want add color.
  • Enjoy this at evening...

Thattu vadai



















Ingredients:

Rice flour - 1 cup
Channa dal - 2 tsp
curry leaves
Cumin seeds - 1 tsp
Chilli powder - 1 tsp
Salt to taste
Oil to fry


Direction:

  • Cut curry leaves,take rice flour in a pan.
  • Add channa dal,curry leaves,cumin seeds,chiilli powder and salt.
  • Add water little by little in the flour to make it to a dough.
  • Take small portion of the dough and make it to a ball.
  • Put this ball in your palm and press it to become flat.
  • Deep fry it in oil.
